Gluten-Free Carrot πŸ₯•Cake Cookies

Makes 10 Mega Cookies

Note:Β  You can also make smaller cookies by using a smaller scoop.

Ingredients

  • 1 cup shredded carrot
  • 1⁄2 cup chopped walnuts
  • 1⁄2 cup raisins
  • 1⁄4 cup coconut oil
  • 1 large egg
  • 1 teaspoon vanilla
  • 1 1⁄4 cups Gluten FreeΒ  rolled oats
  • 1 cupΒ  Gluten free flour (AnyΒ All Purpose cup cup)
  • 1 teaspoon cinnamon
  • 1⁄2 teaspoon baking powder
  • 1⁄2 teaspoon baking soda
  • 1⁄4 teaspoon salt
  • 1 teaspoon freshΒ  grated ginger
  • 1-Mott’s Organic Applesauce,Β  3.9-Ounce
  • 2 tablespoon brown sugarΒ 

Directions

  1. Preheat oven to 350Β°F.
  2. Grate the carrots and chop the walnuts.
  3. In a large bowl, Sift flour, baking powder, cinnamon and salt . Add the rolled oats, raisins,chopped walnuts and shredded carrots . Mix all to combine. In a separate bowlΒ  add an egg and whisk. Then add vanilla, coconut oil , apple sauce , grated ginger, and brown sugar and mix again until all is well combined.
  4. Add the wet mixture to the dry mixture. Mix all together to formΒ  the cookie dough.
  5. Drop the dough into 1/4 (orΒ  oz ice cream scoop ) cup mounds about 3″ apart on a baking sheet. Bake for 10 – 15 minutes, or until golden.
  6. Cool cookies onto a wire rack.

Glaze-Whisk all ingredients until smooth

  1. Drizzle Glaze ontop of each cookies.
